Mozzarella is a special cheese and best consumed the morning it’s made or at least before noon of the same day. The cheese making begins in the early morning hours and lasts until sunrise. The cheese is pulled and sold, fresh milk cheese is always a delight, and avoid any imported cheese, as it’s never the same and often too old.
