So much effort has been made to design this restaurant; a perfect hinoki counter, handmade Japanese plaster on the walls and just the right shadow. Now see the photo and see what’s wrong.

In any restaurant of this level, you should never see tools (such as those metal thongs) at the counter side, and in the view of clients. I urge Michelin to help guide their restaurants in the right direction, and help newcomers to understand the very basics when serving kappo cuisine.
