What should you think when your morning eggs arrive in the form of an orange omelet? The first thing you do is you call room service and inquire as to why they are so orange. The reason in this case is that the eggs are produced by way of a very carotene rich diet, therefore the egg color ends up being orange rather than yellow.
I heard it is those Xanthophylls, a class of carotenoids, a natural plant pigments found in many fruits and vegetables. It’s often thought that beta-carotene, one of the more well-known carotenoids, is responsible for giving yolks the orange pigment that people associate with carrots. But in actuality, beta-carotene benefits yolks nutritionally, rather than colorfully. The carotenoids that cause the deeper color are xanthophylls, which are more readily absorbed in the yolks. The Lutein is one such xanthophyll, and a lot of lutein means a lot more orange.
