Most people wouldn’t venture to eat something that looks like this. A particularly succulent part of the sea cucumber is its intestines. A technique has been developed for plucking them out, a squeeze of your finger into the underside takes advantage of the fact that the animal auto-eviscerates in response to rough handling, a simple defensive mechanism against predators. Then the animal is thrown back in the ocean where it regenerates its own intestines overnight or within a few days.
