Uni’s Crunch

The uni is impeccable, soft roe, subtle taste and a long and dense finish with the crunch of seaweed.

By the way; the seaweed, used to encompass the sea urchin should always be crunching and never soggy.

If you notice the photograph the urchin is not perfectly closed in the envelope of the seaweed. It’s difficult when it’s very brittle and therefore the end almost comes loose every time, and the taste in your mouth defies gravity.
