This is lemongrass and it is mixed in order to avoid a sour taste, or a fowl smell of chicken or fish and it helps neutralize the smell.

In this particular case it is been made into a crêpe and the green color is obtained from food coloring and the rest is question of preference, or style.

Actually this is a desert which will be combined with coconut named buko pandan. The pastry chef at the raffles hotel offered us this version as the coconut was not ready.
