I am fascinated by stone ground flour and fruit breads, any bread that shapes its personality with fermentation. This is a Japanese fruit bread and you can taste its personality, it has undergone some fermentation and some of the fruits generate many volatile and non-volatile flavors.
I am curious about all types of fermentation and one nicknamed “Pruno Prison Wine” an alcoholic beverage made from fruit cocktail, candy, ketchup, sugar, milk, and possibly other ingredients, including crumbled bread. These crude wines are often fermented in toilet tanks and are shared by inmates.
