There is so much misinformation on the internet about sushi and technique. This is one of the worst I’ve seen, a fingers pushing to make an indentation in the rice.
The action is swift, little pressure at the beginning and the fish once placed a top te rice gets a twist and a turn, all at one time to create a motion and evenness. It looks easy but after 30 years you start to get the hang of it.
Note: this is a handheld nigiri only for a photo – a chef shouldn’t feed you directly from his hand.
