Langres Cheese

Sometimes there is a cheese that stinks like hell and it tastes great – so why? Different types of cheeses are made by using different starter cultures. So its the bacteria in the starter culture that influences a cheese’s taste and aroma.

For example, some bacteria give cheese a particularly stinky odor. Examples of such cheeses include epoisses de bourgogne. So stinky it’s banned from being carried on public transportation in France.

Other factors that can make cheeses especially stinky are aging and washing. Some cheeses are aged for many months and develop more taste. The extra aging often intensifies the cheese’s aroma and if you let get over ripe the aromas will dominate the cheese and destroy the ultimate experience.
