Here are some photos I took this year of my favorite sushi chef in Tokyo. I apologize that while some faithful viewers have written and asked for Mr. T’s details, I have not been able to provide them. The problem in Japan is; some counters are introduction only and it isn’t possible to admit clients without knowing them.
This is the way it was in the past and it’s meant to protect the clients privacy. As well some chef who do not speak English, finds it difficult to entertain clients that cannot speak Japanese. Also there are no menus. Additionally if a longstanding client would be offended by any incident by a new client it would impact the chef and his reputation and possibly he would lose his clients.
