Wasabi Oroshigane is a tool I’ve mentioned in other postings and is integral for any chef working with root vegetables. It has two sides with teeth, one smaller and one larger. It is used to grate wasabi, ginger or daikon, and some citrus fruits. If you decide to purchase a oroshigane make sure you have it engraved. It was purchased in Kappabashi Tokyo.
