Tuna Cuts |Bluefin|

This first photo indicates the various cuts of the belly but it is not hon maguro. The three major sushi cuts from bluefin tuna are; otoro, a luscious and fatty part of the belly and chutoro located of the side of the belly, it’s less fatty and more dense in flavour and long on the palate. The akami is red and has a lean and distinctive taste.
