The hospitality and elegance in Italy is second to none! Arriving to a friends south of Naples, we are greeted by their family and served the perfect lunch.

This is pasta is homemade in the south of Italy and without the use of any eggs and other binding agents. You simply take semola and water and once you are ready, it’s twisted almost by the flick of the thumb, as the thumb applies pressure to the small pasta and rolls it out.

Note:Unfortunately to illustrate the move the cook used dry pasta from the morning as the fresh was all used and rolled.
