Baking isn’t as easy as it looks and is not quite like baking – but very near. Here is a new technology I am considering for my new test kitchen. It is called Miss Pro Baker and is one of the first bench mixers with a plunging arm system. Here two arms lift the dough and add oxygen into the dough. It is pretty cool except the arms are fixed, and you need to work the dough in order that the dry flour at the bottom is mixed well.
