There are a few words to describe La Subida; sincere family hospitality. The moment you reach La Subida you feel right at home.

The smile of Mitja, (Josko Sirk’s son), he is a fanatic about wines and his region, he knows his wines, and not just local wines. Then there is Tanja their daughter, she is supreme, a person who always gets the job done with a smile and is thorough and precise.

The table settings are perfectly ironed and some set with the customized wooden balls, hand-made for Sirk, an artisan produces them from Slovenia (the roots of the Sirk family) and they were originally produced for the craftsman’s own pleasure, as fire wood. But since they are so beautiful, they have them displayed, a good souvenir, sold as is.


Tanja’s husband is responsible for the kitchen, he is kind and talented, a capable chef able who maintains the kitchen ideology of the Sirk family restaurant. Then there is the Sirk family’s patriarch, Loredana,(Mrs.Sirk) and she is always dressed so elegantly. A Sirk trait, she is always smiling and ready to accommodates her guests. Among many other things she does, she is at the helm of their bone-in, aged 36 month Osvaldo Prosciutto, a stride of perfection when it comes to hand slicing it, and it’s delicious.


The there is Joško Sirk, a pioneer in the region, he is behind the family business, and watches carefully over their Acetaia, hidden in the forest. The wine vinegar they produce is excellent and it’s produced from their own vines. But Joško has the soul that makes La Subida intersects with the local community.

He is the type of person that seems to have lived in another generation and time, his values are strong and pure, a person who enjoys and respects nature and who has a wonderful gardens around his property.

Finally Joško, the backbone of the family, a pioneer of the region, he is respected and adored by the community.


La Subida is a place where many cultures and people crossroad, and without it, Cormòns would seem empty. If you have the chance to stop there for a night the setting is magical and the rooms are charming.
