Meringue @ ToThalassaki

Meringue is a special and fascinating dessert made from whipped egg whites or aquafaba (liquid from chickpea brine) and sugar. The key to the formation of a good meringue is the formation of stiff peaks by denaturing the protein ovalbumin (white egg protein) via mechanical whipping. These meringues were made by Adonia and filled with local Tinos cheese.
