Neggi Toro Not! – 2 x video

One of the all time temaki /hand rolls/ favorites by many sushi aficionados but don’t be fooled when it’s all mushy and spooned into your roll. Most often the toro is cut up, mushy or even gooey (taken from a container) and isn’t otoro at all. The substitute is collected from all other parts of the fish, and if you see the video you’ll begin to understand.

Neggi in the toro is actually a type of thin green spring onion whose stems are often added to obtain more flavor and balance. In the end the real neggi-toro looks very different as you can see below in the temaki.
