This means you need to use water by soaking the stones for 15 minutes and then you are ready to begin. The science behind it is simple, and when you get the right angle and movements it provides a super sharp edge. The stones come in various grit surfaces that vary in order that you can fine tune your knife. I sometimes start with a stone that is rough and under 200 grit and then work my way upwards with 1500 grit and finish with 5000+.
