Torigai are cockles found in around bays of the Japanese coast off of Aichi prefecture along the coast to Shizuoka prefecture. One of my favorite fish, an odd color grey but that’s the way it should look. It has chewiness to it, and when the shiso is added, it finds its way into the ponzu and there is no better way to enjoy it.
