These beet roots are magical and the varieties are absolutely incredible. It’s the first time I tasted beets that had a bitterness, and the beet we know today is well-formed often round and very sweet. These irregularly shaped beets likely bolted and are consequently woody and bitter in taste.

The bottom line that is some vegetables respond to exposure to low temperatures 5-10°C by flowering prematurely. They can only do this if they have enough food reserves to support their flowering effort but they can reach that point while they are actually pretty small – like these.

These beets are absolutely fantastic !!!
