Most tomatoes ripen from the inside out and hence the tomato seeds are green because they contain chlorophyll. Chlorophyll allows plants to absorb energy from light and as the seeds mature, the outer layer hardens to protect the interior embryo. This green adds plenty of chlorophyll pigments and are acidic yet fruity.
