The one and only T, a marvelous and skillful sushi chef who still rides his motorbike to pick up his fish 5 days per week at Tsukiji. His tools are part of his craft and he works alone, a shy yet sturdy personality, he serves no more than a handful of clients daily and that’s the way he likes it. It is by introduction only – as he maintains his frequent and regular clients without any surprises.
