Tuna Cut Part I & Part II – video

The tuna is one of the greatest culinary experiences consumed raw and ranks with truffles and Matsutake. It is cut from a block from the middle section of the belly and then trimmed and is made into nigiri.


This tuna is 15$ per slice and so it is served o-ma-ka-se style (chef’s choice) to prevent any unexpected bill for customers. So its easy to figure out that at any quality sushi counter using domestic fish it will cost anywhere between 250-300$ per person without any alcohol.
