A giant bath of oily oil to make tons of Mathri snacks, a flaky fried biscuit from north-west region of India. Imagine they are often stored in big jars at room temperature and used during marriage or religious occasions.


While most traditional Indian diets are centered on carbohydrates, their diets tend to have multiple staples of rice, wheat, potatoes coupled with high levels of sweets and sugars including cheap sweetened drinks and bakery – ouch!
