The crabs are carried home and placed in running water and go to heaven as the chef says. The still bowl of water and they cease to breathe. Crabs somewhat similar to fish are equipped with gills for breathing. The gills themselves are feathery type structures located at the top of the crab’s walking legs. They essentially drown because they lose their footing and drown.
