The idea of making hand made Indian curry was something I learned in India. The idea of adding some umami by using some konbu is my own idea and it gives another dimension. Making curry is simple, a masala of spices you choose and if preferred add some onion and make a base and add your base ingredients. I use cumin, turmeric, mace, garlic, black pepper, green pepper, fenugreek, lemon rind, cardamom and smoked and regular paprika. The rest is up to your own imagination. Simmer for a few hours and reduce and reduce. Then strain the liquid and thicken it with some kudzu.
