My favorite combination of blue fin tuna and vegetable. There are few combinations that include fish and vegetables when it comes to authentic nigiri. I know in America they use vegetables and produce futomaki and California rolls but in Japan it isn’t common. This is shiso leaf, goma and takuan (pickled radish) with some long cuts of chutoro. The intensity of the nori and shiso comes together with the goma seeds and the chutoro that is tender and sweet – at the back end the bite of the radish and the aromas of the shiso make it my favorite roll.
