Visiting India leaves you with a chai fetish and the bug stays with you. I continue to experiment and by using turmeric you add a greater depth in taste. Turmeric is a member of the ginger family and the intensity and flavor are superb. After the chai is finished, keep it over night and strain it into a bottles and refrigerate. Don’t forget use black tea, plenty of ginger and spices. There is nothing quite like it!…and before I forget make sure you bloom the ingredients by heating them with the sugar before adding the water. Boil 7 times and let it rest with a covered lid.
