Look carefully at this photo. I post sushi often but not as often as I should :-). In this photo you notice a thin layer of fat between the outer skin and the flesh. This is what adds a dimension of taste, a sliver of fat on it stays fatty while the flesh is slightly cooked by the salt and vinegar bath.
