All you say is Matsukawa san is he has talent, good taste, balance and an excellent disposition. His restaurant is quiet, it matches his personality. He works with mostly, if not all lady staff, both in the kitchen and in the service. The staff are attentive, he is quiet and focuses on pleasing clients. That’s the way it should be….chapeau to a young chef who makes it look so easy, and without tremendous focus and skill it wouldn’t possible.
