Rib Eye Wagyu

The steak in Japan often has a rib eye that is much smaller than those you find in the west. Here the cap is fatty as can be, and the meat has been aged. There is a small amount of rot seen in this photo as it was the end cut of the last rib. The steak was well marbled yet I didn’t trust the rot, so I removed the tissue and separated the eye.
