The ponzu I speak about is usually made with mirin, shoyu and dai-dai (bitterish orange) but only at the time of the New Year however. Dai-Dai is no longer in season and so chefs resort to using other citrus such as kabosu which is a sweeter version of citrus, or the smaller type citrus known as sudachi which is slightly more citrus sour.
