An austere wine to say the least if you think you are getting a dinner wine. Characteristic of the region only a very few domaines have persisted (only four domaine’s in Gaillac currently make a Vin de Voile), Plageoles have gone on to make this rare style something of a house speciality. It is only made from Mauzac Roux grapes high in both sugar and acidity.
The wine is naturally fermented in very old demi-muid barrels. Soon after a thin veil of flor begins to develop on the surface of the wine. Once fully formed, the voile ‘protects’ the wine from overt oxidation while it ages sans ouillage (without being topped up), for a further seven years. During that time, the wine gains in depth and complexity and loses about 20%-30% of its original volume. Plageoles Vin de Voile is kept in its own small barrel room to prevent the flor yeast saccharomyces bayanus from ‘infecting’ the Domaine’s other cuvées.
