Takenoko Bamboo

The season is still early yet some small takenoko are found and delicious. They are not larger than a finger, or a thumb. The process to cook fresh takenoko is cut the top, add some rice bran and boil the water steadily and slowly until they are cooked perfectly. This process depends on the size of the takenoko and its a matter of trial and error.
