Simlicity is what makes things complex. This fish is shiromi – white fish and is has the sex appeal I like in sashimi with ponzu. karei and Hirame are both flatfish and look very similar. But there are few differences between them but the firmness of Hirame is more obvious as it swims more catching fish to eat. Karei in the other hand, eats most of its food on the sea ground in the sand and it has that smooth sexy texture.
