Maguro Bocho – video

As long as a tall human, or a short Bocho for trimming tuna, it is dangerous. I am watchful about each step, and I know that I cannot be too anxious, or I’ll embarrass myself by getting on the way. There is nothing worse than getting told, move here, don’t do this or that.

The maguro bōchō is a long knife with a blade length of 40 cm to 150 cm in addition to a long wooden handle. It can fillet a tuna in a single cut, although usually two people are needed to handle the knife and the tuna. The flexible blade can be curved to match the shape of the spine to minimize the amount of meat remaining on the tuna carcass.
