Farinata Pancake – video

Walking in the Cannes Market I tried this pancake that caught my eye. It is made by stirring chickpea flour into a mixture of water and olive oil, pouring the batter into a pan to make a pancake paper-thin /4mm thick/ and baking it for a few minutes in an open oven in a tin-plated copper baking pan.
