Tuna Cuts Aficionados

I am asked over and over again about the different cuts of tuna and to illustrate the two prime cuts you can see the below fatty and less fatty tuna. The basis for tuna cost is based on multiple factors but for sushi aficionados the easiest way to understand tuna is; fatty prime cut is o-toro, the medium second prime cut is chu-toro.
