Many truffle customers in restaurants are seeing the truffles after they are washed and dried. In this case you will have current prices at $4,000+ given they are traded at least once or twice. The current prices are anywhere from $1,400-3,000/kg at the wholesale level from a dealer and 30% less from a cacciatore. You can see from this photo that raw truffles are packed with dirt, either on purpose or by the very nature of their location under ground. In the second photo I cleaned the truffle with a toothbrush to get it ready for slicing and still after a thorough washing it is still muddy.
