Carbonara Held Just Right

Carbonara an Italian pasta with its roots connected to Rome is made with eggs, parmigiano, pancetta and black pepper. I know this sounds odd, at least I had never heard of this technique being used. This spaghetti was pre-cooked and then held in olive oil until the egg is ready and it is then heated in the oven while the egg cooks. It was quite an incredible dish topped with regal white truffles. /bravo chef/
