Finger Bark Fassone

Asking around I try to get some feedback from chefs after a lunch at the well-known three-star restaurant in Padua named La Calandre. One chef reminds me of his most memorable moment last visit to La Calandre many years ago. He describes tasting raw beef served as he described it on a tree. Of course there was some language barrier in the translation, but some things never change. In this particular case the Piedmontese raw beef is served on the inside of tree bark and white truffles are shaved on top. This finger food you either accept or go somewhere else as it’s a signature dish at La Calandre – enjoy 🙂
