This is excellent shellfish is more “katai” /hard-chewy/ than I recall in the past months. The taste is excellent and the added yuzu refreshes the taste with a zinging sensation. It’s often said the spring is the best months, however I enjoy it whenever it’s available. The size, color and taste varies by season.
