When Baur au Lac Zürich comes to mind, I think of an old-fashioned menu in a classical Swiss setting, but just the opposite is true. Invited there for a light dinner, I was pleasantly surprised by the new menu, the use of quality ingredients, and the simplicity of this dish which was close to perfection.The green water fused with some neutral oil, green olives and micro-herbs flowers gave it a clean-cut.
