When you are faced with a box of 10kg, it is tough to make heads or tails as there are so many shapes and sizes. I am fortunate enough to have a good chef friend (Italian) in Tokyo so when buying truffles, and I’ve said it before; you need a good clean appearance, not too much make up, or dirt packed in crevices, and most importantly a long linger of clean truffle aroma, and no after-nose off aromas. But bear in mind these truffles are gathered over time, stored, then washed and powdered and then shipped.
