This was the last batch of truffles of 2017, and so I’ll wait patiently until next year. Although many said it was a terrible year, I did hear from professional friends in Italy who claimed to taste the very best truffles they had ever had.

It just so happens that in a difficult year, it means fewer truffles but some exceptional truffles with the most intense aromas and flavours.
