After many years we returned to Sostanza in Firenze to return to one of the all time great restaurants named Sostanza. This time we missed Fosco, a true tradegy his passing, after being hit riding his scooter, his rib punctured his heart and he passed immediatetly. It was great to see his son, and Massimiliano who is still very much a part of the estbalishment.
There is no doubt Sostanza hasn’t changed, and is still the mecca of Florentine cuisine, at least for us and their carciofi egg is something I would fly there just to taste.
