I’ve eaten lots of Tartar in my life and I can say that this is certainly one of the best. Hatecke is a butcher in Engiden a mountainous part of Switzerland, and while they sell meats, David the son of Ludwig is an awesome cook.
David is passionate and he rides hard. While the recipe is a secret. the chef (David) did share it with me and it’s very intelligent. The meat has a quality of texture and taste which is just what I call ultima or perfection.
