Just look at the gluten formation the production of cellular bubbles they look almost perfect with a very nice dark crust, this was perhaps what is considered a perfect mistake. The Hungry Tourist was trying to make pita bread but landed here. It’s really was delicious the tomatoes and capers and the fluffy quality make it one of the best breads I’ can remember tasting with all purpose flour.
