Cooking in a fireplace is always astonishing and no doubt proves offset fire cooking works extremely well if you use a spitjack, commonly referred to as a rotisserie. We were fortunate to be invited by Fx Cuisine to enjoy fish roasting on an open fire – spiced with a rub and cooked to perfection.
