Sushi in the summer is much better than I remember, or is it just I missed my rice and fish.
In the summer some fish are considered to be in their prime – “shako” Japanese mantis shrimp are wild the females served full of eggs (called “katsubushi”) – surprisingly fish is perfect given the waters are significantly warmer than they are in the winter.
